Great way to use our Onion Marmalade


Corned Beef Rissoles with a Twist!

Make a potato mash with just potatoes (5 or 6 large potatoes) and butter and add one tin of corned beef and a tbsp of mustard to the mash, mix with a fork. 

Add some seasoning (pepper, salt, nutmeg, Worcestershiresauce), dice an onion and fry in a pan until lightly crisp and a
dd to the mix.

Allow to chill, then mix with some flour ( I think 1 or 2 tbsp will do) make a splodge and add a dollop of Foragers Finest Onion Marmalade and form rissoles with the help of a table spoon.

Roll the little balls in flour (or breadcrumbs) so they're evenly coated.

Heat butter in a pan and fry the rissoles until crisp.

(best served with extra marmalade and a glass of red wine in front of a real fire with a smiling son and contented wuffer sat on your feet! - well it works for me)
